Use garlic flakes in liquid dishes that undergo some cooking time, to soften the pieces, letting them release the garlic flavor. Typical dishes in which they are used include soups, stews, sauces, meat loaves, and casseroles.
The garlic plant's bulb is the most commonly used part of the plant. With the exception of the single clove types, garlic bulbs are normally divided into numerous fleshy sections called cloves. Garlic cloves are used for consumption (raw or cooked) or for medicinal purposes. They have a characteristic pungent, spicy flavor that mellows and sweetens considerably with cooking. The distinctive aroma is mainly due to organosulfur compounds including allicin present in fresh garlic cloves and ajoene which forms when they are crushed or chopped.
